Apple Date Muffins

These actually turned out awesome!  I made these for our paleo potluck a few weeks ago.  Like many of my recipes I just kind of made it up as I went along.  It is funny how those usually tend to be the best ones.  Perfect for the occasional sweet tooth.  This does contain honey which keep in mind is a limited Paleo sweet and still spikes your insulin levels. 


Apple Date Muffins

Ingredients 

  • 1 large apple (pink Lady or Pink crisp)
  • 6-7 medjool dates pitted 
  • 2 eggs
  • 3/4 cup  Raw creamy almond butter
  • 3/4 cup almond flour
  • 1/3 cup coconut flour 
  • 1/4 cup coconut oil 
  • 1 tsp real vanilla extract
  • 2 tbs honey (can go to one if like a little less sweet)
  • 2 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1 tsp baking powder

For the date mixture:
  • 6 Medjool dates, pitted
  • 1/2 tsp all natural vanilla extract 
  • 1 tablespoon coconut oil

Put dates in a separate bowl and microwave for 30-45 secs until you can mash with a fork mix in the coconut and vanilla and set aside to add to muffin batter.

Directions 
  1. Preheat oven to 350
  2. Cut Apple into slices then small cubes and place in a saute pan with small amount of coconut oil less than 1/4 cup water and 1 tsp pumpkin pie spice.
  3. you want to stir them until they are only slightly cooked.  Remember the oven will do the rest.
  4. take out of pan and set aside to add to muffin batter.
  5. In a large mixing bowl, or a mixer add all of the rest of the dry ingredients, honey, eggs, almond butter, and coconut oil. Mix ingredients well
  6. add in the date and apple mixture and continue mixing for another minute or so.
  7. Pour mixture into a muffin pan.  Different sizes will call for different baking times.
  8. Make sure to grease the pan if not using muffin cups.  
  9. Bake time 35-40 mins.  stick toothpick in middle to see when done.

Yummy Apple Cobbler

I wanted a sweet treat that I did not need to experience all the guilt.  I have made this with mixed berries as well and it is also good!

Yummy Apple Cobbler

  • 2-3 Apples ( I like to mix Pink lady and granny smith) 
  • 1 Egg
  • 1 1/4 cups almond meal 
  • 1/4 cup coconut flour 
  • 4 Tbs coconut oil 
  • 1 tbs cinnamon 
  • 1 tbs pumpkin pie spice
  • 1/4 cup walnuts 
  • 1/4 cup pecans 
  • 1tsp pure vanilla 
  • 2 tbs freshly squeezed orange juice
  • raw honey to taste

  1.  Preheat Oven to 350 
  2. Thinly slice Apples mix in bowl with fresh orange juice, and cinnamon and pumkin pie spice 
  3. place nuts in food processor for a 4 sec count.  still want a bit chunky
  4. in a separate bowl mix, almond meal coconut flour, nut mixture, egg, vanilla, and coconut oil in a bowl until mixture clumps together.  
  5. spread apple mixture over bottom of pie plate and crumble  flour nut mixture  over the top of apples.  Drizzle honey over the top to taste.
  6. Cook for 35 mins

A different Version of Paleo Banana Bread for that sweet Tooth!!


Paleo Banana Bread

Gluten-free, grain-free, dairy-free

Ingredients

  • 2 cups almond flour
  • 1/4 cup flaxseed meal
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2/3 cup chopped nuts (I used pecans)
  • 4 really ripe bananas (mashed well)
  • 2 tbsp local honey
  • 4 eggs
  • 1 tsp vanilla extract

Directions

  1. Preheat oven to 375 degrees F.
  2. Sift the dry ingredients together in a large bowl.
  3. In a separate bowl, add the mashed bananas, eggs, honey, and vanilla and mix well.
  4. Make a well in the dry ingredients and pour in the wet ingredients. Stir until combined. Normally with breads or muffin recipes, you don’t want to overmix, but since there’s no gluten here, mix to your heart’s content. The muffins won’t get gummy or icky.
  5. Fill greased muffin tins, baking cups, mini-loaf pans or big loaf pans about 3/4 full. Bake muffins for 23-25 minutes and loaves for 30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let cool slightly and enjoy with a pat of almond butter, coconut oil or grass-fed butter. Mmmm.

Paleo Dessert Cinnimon Apple Scone from the CaveGirl dish

 I found this recipe on the Cavegirl dish.  This is one of my favorite sites for recipes!!!!

Cinnamon Apple Scones 




Cinnamon Apple Scones
3 small apples (peeled and pureed) or 2.5-3 cups apple sauce
1/2 cup and 1 tbsp coconut flour
4 heaping tbsp coconut oil
1/2 tsp baking soda
1 1/2 tsp vanilla
2 eggs
1 tbsp cinnamon
Sprinkle of nutmeg 

Pre-bake
Preheat the oven to 350F and let your coconut oil soften. In a large bowl, mix the flour, apple puree, eggs, and baking soda. Add the softened coconut oil and remaining ingredients. Form balls or shapes of your choice and lay out on a baking sheet lined with parchment paper. Bake for 10-12 min (or longer if you want a drier texture). If you are looking for a sweeter bite, drizzle honey over your baked scones and let them soak up the natural sweetener. Add chopped walnuts to the mix or use a ripe banana instead of the apple. Top with some more cinnamon.

Amazing Cookies!!!!

Coconut banana cookies



From start to finish these cookies took  18 mins to make. (not including  dishes)
INGREDIENTS:
1/2 cup + 1 tablespoon coconut flour
1/2 teaspoon baking soda
8 tablespoons refined coconut oil
2 lrg eggs
1  very ripe banana
1 1/2 teaspoons vanilla
3/4 cup dark chocolate chips

INSTRUCTIONS
-In a medium bowl whisk the coconut flour and the baking soda together.
- In a large bowl mix together the coconut oil,banana, eggs, and vanilla.
- Then mix the dry ingredients into the wet.
- Add the chocolate chips.
- Bake at 350 for 12 minutes.
- Enjoy!

Paleo Apple Pie

I found this recipe on CrossFit Telluride's website.  It looked good, so for those of you with a sweet tooth here you go:


Paleo Apple Pie?


This recipe is quick and delicious! If you are looking for a desert - try this one out. 

Crust
1/4 c. pecans
1/4 c. walnuts
4 medjool dates
Mix in a food processor and spread thin on a plate.

Filling
1 or 2 apples chopped 
1/4 tspn cinnamon
1/8 tspn nutmeg
1/2 tspn lemon juice (optional)

Directions:
Cook apples until soft
Spread filling over crust. Chop 3/4 cup pecans and spread around the circumference of pie. 
Takes about 5 minutes to make.

Got this Great Recipe from Paleo Mama blog

You know that really yummy mashed sweet potato dish that’s covered with the pecan-praline crumble that you indulge in at Thanksgiving?  I’ve replicated the yumminess without all the sugar and guilt.
Ingredients:
2 large yams
1 tsp cinnamon
1/2 cup coconut milk
1/2 cup pecans (chopped)
Directions:
1.  Rinse off yams and stab them with a fork a few times.
2.  Line a baking sheet with aluminum foil (this makes clean up a snap).
3.  Preheat oven to 375.
4.  Bake yams for about an hour until you see liquid yam sugar oozing out of the holes.  Mmmmm….
5.  Remove yams from oven and allow them to cool for about 10 minutes.   Use an oven mitt to hold yams and carefully peel off skin (it will come off easily) using a fork or spoon.
6.  Place yams in a large bowl and smush them up with a fork.  Stir in the coconut milk, cinnamon, and pecans.

Paleo Banana Bread

1 Cup Almond Meal can use coconut flour to change up
3 Bananas mashed up
1 Cup Almond butter
1 teaspoon nutmeg
1 teaspoon pumpkin pie spice
1 teaspoon baking powder
1 teaspoon baking soda


Set oven to 400 degrees, Mix all ingredients together in a bowl until well mixed.  Pour batter into a a baking loaf pan.  I greased with coconut oil.  Bake for 35-45 min depending on how well done middle is.
